Properties: White or light yellow powder, extracted from bovine Achilles tendon or kangaroo tail. Soluble in water. Under the action of acid, alkali, enzymes, or high temperature, it gradually decomposes and eventually hydrolyzes into eighteen α-amino acids, mainly glycine and alanine (accounting for 44%). Structurally, collagen includes 18 types, such as Type I, II, III, IV, V, VI, etc., with Types I-IV being predominant. It consists of two α1(Ⅰ) chains and one α2 chain intertwined to form a unique triple-helical structure, i.e., [α1(Ⅰ)]₂α2.

Under the action of acid, alkali, enzymes, or high temperature, it gradually decomposes and eventually hydrolyzes into eighteen α-amino acids, mainly glycine and alanine (accounting for 44%). Structurally, collagen includes 18 types, such as Type I, II, III, IV, V, VI, etc., with Types I-IV being predominant.
